Canarian Mojo Potatoes

Canarian Mojo PotatoesCanarian wrinkly potateos (Papas arrungadas) is a traditional baked potato dish in Gran Canaria. It is usually served with a pepper sauce (Mojo) or accompanied with a meat dish. It is made from small potatoes (cleaned but not pealed) and boiled in water (usually adding salt during boiling) and then baked until the skin becomes shrivelled. It is considered to be one of the more unusual dishes of the Spanish cuisine but also an exotic dish.

Mojo Sauce

  • Peel and section one whole, small clove of garlic
  • Add one large tablespoon of cumin powder
  • Add one large teaspoon of paprika
  • Add one large teaspoon of sea salt
  • Add a little olive oil and grind ingredients into a paste (ensuring all garlic lumps and ground up)
  • Pour into blender and use more olive oil to get mixture out
  • Add 1/2 a red pepper (finely chopped) and blend
  • Add another 1/2 chopped red pepper and blend
  • Add another 1/2 chopped red pepper and blend
  • Add another 1/2 chopped red pepper and blend (two whole peppers in total)
  • Add more olive oil to dilute as necessary or leave for a spicey taste
